You got some of the scaling wrong so I'm just leaving this here... 12 winged Angels = Heavenly Virtues [Conceptual Level existence] known ones are (Michael, Uriel, Gabriel, Raphael) The Author never clarified the rest so for now there's only speculation. And Uriel here isn't referring to the Dominion in the Darksiders world but rather the Archangel, when Roy destroyed the world of Ashan and Isabel went back to Eden there was a mention of Uriel there that was when they put Roy's name (Osiris) into the book of truth. 12 winged Demons = Deadly Sin (Original Sin) [Conceptual Level existence] (Asmodeus, Belzeebub, Mammon, Samael, Leviathan, Lucifer and Belphegor). Lilith although is on the same spectrum and the Heavenly Virtues and Original Sins is far older, in Roy's words she was the "Secretary of the Creator". She also exists as a myriad form of all races in one body so there's the Dragon Lilith, Angel Lilith, Demon Lilith, Human Lilith, Elf Lilith, Vampire Lilith, etc... all as a single person, I know it's weird and the tradition of creating clones even came from her. 6 winged Angels = Archangels (God Level) and Seraphs (Demi-god level) (those in the Seraphim realm as well i.e. Cherubs and Thrones) 6 winged Demons = Demon Kings (God Level) and Demon Lords (Demi-God level) Demon Kings and Archangels can change their wings freely from a single pair to 3 pairs but not 12, wings represent identities which is why Roy keeps a single pair of reverse wings which was inspired (stolen) from Samael. 4 winged Angels = Dominions 4 winged Demons = High Ranks or Archdemons Souls take on various forms but until you're at the King level it'll mostly be Noble and Fallen Souls, High Quality and Low Quality Souls. It also exists as some type of Order and not Chaos. "Worlds" in the Infinite worlds are Realities not universes since most worlds host more than one universe example being Marvel and DC.
