I think the “turning into a frog” thing was specific to anyone who failed sage mode while signed to the Toad summoning contract. I think if someone failed sage mode while signed to the snake summoning contract, they would turn into a snake statue.

Well, Jiraiya reverse summoned himself to the toad, so it would make sense if different people had affinities for different animals and turned into them when absorbing nature energy.
