You just end up skipping, ignore or messing details. Jacob, at this point, doesn't know anything about the Cullens. He didn't transform, his reaction was, first of all, duplicate of Jared so not really having an effect and two, stupid sine its not matching the plot. I wonder, are you going to do a "fix it"? I mean, this novel has a lot of star wars logic, ie someone from the side can easily see this version of Vampires are not bad. They are humans with powers, some of them (as many humans do) succumb to the temptation, the belief they are some apex predator and can do what they want (plus human blood actually tastes better and makes them stronger) and some of them, like the Cullens, can control themselves and in some way are better than your average human. They could live out of donated blood if they wanted to, human or animals, much less killing than even the wolves that always eat A LOT more. Point is, it's one of those plot points were characters are far less logical, smart or observant than the readers because otherwise half the drama of a story won't happen. I still don't get why you ignore a lot of details from canon, change them or just forget when writing the proper details would take just as long, I imagine you like the canon otherwise you wouldn't write about it.
