A building domain seems bigger than a crafting one. Building weapons to buildings and architecture, to all kinds of things (just add the word build to them e.g. build bonds, build friendship, build family, build homes, build weapons etc.) It's different from crafting in that sense which is why the particular word "building" was used instead of "crafting". It's like saying i want to build a romance with your daughter. It sounds much better than saying i want to craft a romance with your daughter. i think the reason the writer said "Build" instead of "Craft" is because of that. He wants Hades to be the most powerful god without seeking power to be the most powerful, so he gave him a very flexible domain like "Build" that can mean many things or refer to many things. This very flexible domain with lots of variety (having different forms) and variables (not consistent, can be changed and can adapt to new stuff) can give him many abilities, possibly abilities of even other gods without those gods calling 'The END' their home. so it makes sense to give him a domain like "build" and not "craft". Also Crafting falls under the building domain so he'd still be able to do the same things a god of crafting would be capable of, he'd just be able to do more than that.
