I think that, while irrelevant, the subclass remained because it would subtract from his max level. It'd be mentioned if Han Xiao's overall level was reduced by 10, even if his stats wouldn't necessarily go down. Chapter 49 states that the [Civilian] subclass was "...simply one of the default starting classes for new characters. It functioned as a tutorial class that could be deleted upon the first advancement.]
It seems that the only deletable subclass is Civilian, but I could be mistaken. Pretty sure that even at Grade X Han Xiao still had the Agent subclass from Germinal.

Iirc, the Luck stat only increases drop chance and conflict judgements. It's the [Luck Glow] talents that affect one's opportunities. Luck is really weird and seems to only be effective with a lot of points in it.
