Dude, he killed unredeemable monsters who attempted to murder him, seems a bit farfetched that he would just ghost his entire family for an entire YEAR without even trying to explain anything to anybody close to him. Just because he felt a bit guilty about it he closed himself off to the entire world, doing nothing for an entire year except sit in his trunk. This is lazy writing, the author didn't want to have to write slice of life chapters with him and his family, or simply didn't want to have him research any magic for an entire year so he found this dumb excuse to do it.

Maybe don't pamper her so much but keep their dynamic as is or make them evolve into lovers, that would give you the excuse for him to be very protective of her

Dunno about how much CE you want to give the mc though, so that's your choice, SSS+ seems nice (since I enjoy op MCs), but it depends on how powerful you want him to be in the end

Gojo's CE isn't limitless, it's just that he uses virtually almost no CE for his techniques, which gives him access to almost infinite uses of techniques, Yuta has a ton more CE but not gojo's six eyes, this allows him to do the same thing as gojo but not for the same reason. So while gojo's CE should be something like S or SS, yuta is SSS, however gojo's CE control should be SSS but yuta's should be SS or S I think
