It’s possible she does remember or did use her aspect in the coffee shop. But she has been shown to be able to see things like Birthdays since her introduction. Also Sunny’s Mantle is supposed to hide his power from things like Cassie’s ability.

My guess is that something will make ‘real’ Sunny have to act covertly, (maybe as Mongrel) and he will run into the cohort during that time. Then at some point something will occur and the cohort will need to flee Valor, and leave the tower behind. With them needing a place to stay Sunny will lead them to the Nameless temple

So Sunny goes and tries to Ascend to Tyrant. Fails to do so in time but gets close, goes to the dream realm so Neph can give him the five Lights. During the battle Sunny is outclassed but holding. Accidentally kills enough other Nightmare creatures to ascend. Either Jet or Roan die defending him during the Ascension. And Sunny kills the beast afterwards
