I wonder why would he care enough to entertain the thought of building relationships with super-weak women, does he enjoys it, or maybe he has unknown hidden intentions... Or it is just his nature as a dragon?

Mostly just his nature. Dragons in general, and Darganth especially so, are exetremely confident in their own power so don't really care how strong their partners are. Instead they care about how fun they are to be around as their long lives make boredom one of their greatest enemies.
