Wouldn't it be smarter to steal them incognito rather than openly? Even if they're strong they just made enemies out of pretty much the entire world. Letting Loki escape with a tracker or something and then robbing him blind without anyone else being the wiser would of been a better plan probably

Good choice for the stone. I personally think that for the second dagger he should take Reality or Soul stone. Alternatively Reality should go to Wanda but the Mind stone fits her better in my opinion 🤷🏼 And Soul or Power stone to Silver.
