Honestly, if I were to try for a similar arc, I might have someone close to him be killed, or maybe he could be ostracized by others. His change of heart was rather quick and not impactful.

It feels kinda forced to already have him be like "my heart is dead, I shall take revenge". Changing worldviews so drastically is a gradual process, and it should take a long time. First, he hesitates and thinks a lot about doing things like dismembering the corpse or eating it, but upon doing it a few times, he gets used to it and his ideas of revenge are reinforced.
