To answer all your doubts, because of how the curse my OC MC has, he never can actually become too powerfull, if this happens and he enters "godhood-like state", the curse activates and he gets isekaid all over again, So this is made on porpurse and because of the current body he has in the moment..... About the plot and journey, in the start is obvious that the things will stay a little as they were in the original novel, since there werent so many powerfull consequences for the little amount of actions the MC did, I dont know what chapter you are now in the fanfic, but at least in the current chapters, things are changing and becoming their own plot, that still uses the original plot as bases, but it's like two separated things that randomly cross together. I am at 16th chapter at this moment, the curse is underestable, i was mainly curious about MC going his own way, when im reading fanfics i mostly enjoy stories where author shows original elements, such as magic, characters, places or completely different perspective of the story like bashing fics.
