Qian Meng is very different from the usual immortal. He kept his scars after ascending, and most of his morality. It kept him grounded and reduces his risk of a qi deviation.
He was shaking because he was trying to restrain himself. He doesn't think Qian Meng has similar feelings anymore because he lost the majority of his memory from when he was young due to the near-death experience and his own trauma. So he's trying to be respectful while also being terrified who losing him again! Hope that makes sense!
