Since you started with Twilight, why not make a TVD/Originals fanfic. It's also mostly about vampires but with a little more added to t. You could also try to do an immortal MC in either the TVD/Originals world or in the world of Supernatural as a hunter. Or you could try to make the MC a witch/wizard in those worlds. Would be more interesting to see the MC figure out a way to get his own immortality rather than getting it from some alien civilization that gave it to him after they transmigrated him!

I honestly think you shouldn't really build up to some ultimate boss to end the story as if it were a game. Kind of defeats the purpose of the story. The whole point of an immortal (in a somewhat regular world with low power levels) is mostly to see how he spends his time going through time. Basically a glimpse of what he did throughout the ages with some cool battles or stories here and there. It is also to see how he affects the canon story we all know and to see how he interacts with those characters once canon time comes. Making an end boss would just make it feel forced that an enemy just as OP as the MC pops up out of nowhere just to give some sort of challenge to the mc. Just let the story play out without any bs enemies popping out of nowhere.
But don't worry, I know he is super OP, but I already have an end game enemy, who will be on Parr with the MC, and something or more like someone, I think will surprise all of you. - bob6850144dCommented
