i guess for the sake of plot advancement. the mc is not strong enough to face 3 at the same time, so using some writing magic called plot armor, he can aggro just one monster

I might be overthinking, but i guess that the mc wants immortality because only in this way his wife can live, in his memory. If he dies, so does the only memory of his late wife, and this is the main purpose of his race to immortality. Again, i might be overthinking, but i like to think that Jacob is not only a cold blooded killer, but also have compassion, and this makes him more human, and the book more enjoyable to read.
