how come he has 5 skills here? I thought you could only equip skills from the current path as main skills? As a lvl 11 fighter, he should have 3 skills and 2 empty slots, unless I missed something?

I *think* he set healer as his main path (previously Human was his main path). My understanding is that any exp from locked paths goes to the currently set main path. Not super clear though. There was some throwaway line about healer being his chosen path back in the village.
I feel like he hasn't investigated much at all. We still don't know for sure if others have their own system, or understand the mechanisms of power. At the very least, he could have been using appraisal on his sisters to see if teaching them how to read and write helped to level them up. In fact, it doesn't feel like he's used appraisal since he first got the skill, unless the brief mention of appraising ores is also counted, but the way it was written sounded more like a manual appraisal rather than a skill based one.
Whenever 'Paths' are brought up, my first thought is the 6 paths of reincarnation from Buddhism. So, path of celestial, human, beast, ghost, asura and devil (exact names vary by translation). Will be interesting to see if this novel follows the trope or goes in a new direction.
