If it's like in some games, agility is for movement and dexterity for precision with one's hands which is not that important (depending on the game system) for melee combat but for things like crafting, for example. At least, that's my take on it.

It is not impossible that the world she was in also had a 'world-will'? Perhaps she was the destined villainess or cannon fodder even in that last life of hers. Otherwise - heaven forbid!- the evil girlfriend could have been straight and only used Emilia for her own advancement.
