How are they believing it though? I think they're attacking it because: 1. Tiber Septim used Numidium to destroy Summerset Isle. I think the Thalmor is still holding grudges for that. 2. The white gold tower is the seat of the empire so it makes sense for the Thalmor to invade it . 3. High Hrothgar's existence is blasphemous for the Thalmor since it was an important place in Tiber Septim's life and the center of nord culture.

The world towers theory is just a fan theory, not part of the lore. The brass tower referring to the Numidium, the white gold tower, and High Hrothgar were all used as metaphors in the prophecy, but there was nothing mentioned about them being the foundation and support of the existence of Nirn.
