The Perfect Rice Crispy Treat

A Word from the Author: I've eaten these... many times.

1 tray, batches get cut into 16. 4-way in the middle and 4 ways in each of the quarters = 16 large pieces.

Ingredients:

■1 Family Size Bag of Rice Crispies.

■2 Bags large Jet Puffed Marshmellows (the big ones but not the oversize massive ones)

■2 Sticks of Sweet Cream Butter (Unsalted)

Non-Food Items Needed:

■1 Baking Sheet, large, 'half-slab' pan if possible.

■1 Mixing Spatula (Get the rubbery silicone type, it cleans up easier and doesn't scratch your pans. )

■1 Bowl or large cup of Water

Instructions:

Step 1) Melt Butter.

Step 2) As butter is about to completely finish melting, drop all Marshmallow into the large pot.

Step 3) Reduce Heat and fold butter into/onto marshmallows until only small tiny balls of marshmallow remain along with the thick gooey red-hot marshmallow. (Those bigger bits are like syrup nuggets, don't let them melt all the way before Step 4.)

Step 4) Pour 95% of the Family Size Rice Crispies box into the pan and fold gently but vigorously until uniform consistency. Avoid letting dust in bottom of cereal bag and broken pieces fall into the mixture, makes dusty treats. **work quickly but don't crush​**

Step 5) Once folded and mixed fully, use spatula to drop it all onto the baking sheet. When it's entirely out of the pan, use the edge of the spatula like a soft spoon and lightly 'chop' at the lump of treat, spreading it out. It's hot and malleable, you're working to spread it out, not mashing it.

Step 6) When it's 'sort of spread out', dunk the spatula into the bowl of water and run it over the top of the tray of treats, trying to flatten it cleanly. The water, will help keep the spatula cool and give a perfect shape to the top of the rice crispy treat tray. 'pretend you're painting it flat with the cooled spatula.' Don't bring water along, the water is just to stop the melting sugars from clinging to the spatula.

[WARNING:] DO NOT STORE THESE IN THE FRIDGE. Wrap individually or keep in a container. They are good for about 2 weeks if wrapped, less if left out. Putting them in the refrigerator will cause them to harden significantly, which is a trait most find 'Completely' undesirable in rice crispy treats.
