The first part of GrandLine is divided into seven routes (although some mysteries could overlook unexplored places).
Joz wasn't planning his entry into GrandLine and wanted to discover another path than Luffy's.
But when they arrived on GrandLine, Joz and his crew knew that they had to match the route indicated by the log pose with the GrandLine sea map, thus allowing them to understand the chosen path.

"Isn't it possible to navigate without a maritime chart?" Joz asked. In the manga, the log pose was the only essential tool to navigate on GrandLine thanks to its ability to store the magnetism of the surrounding islands.
"There are seven routes. Without a map, I don't know which one to choose and especially which one I chose!" replied one of the captains angrily and banging the table. "Don't you know that GrandLine is a dangerous sea, you are on the wrong way, and you can die"
"This explains it," Joz said, touching his chin and remembering that Nami had stolen GrandLine's card from Buggy the Clown.
As said previously, without a map, we cannot know which direction we are going, especially on which island.
It is not one of the four seas, so you can die the next day or even the same day if you go in an unknown direction.
"Okay, let's start by recording the magnetism of one of the seven islands," Joz told David.
