Well it was never really specified how the diary wanted to resurrect Tom riddle. If I remember it right he drained the lifefirce of ginny to fuel the power of the body he projected out of the diary. So I think the concept is similar to 3D printing. He is designing his new main body like on a computer. The diary prints it into reality. And the life force is the energy/material needed. So I don’t think it matters if it’s a human, animal or monster. The only thing he actually needs is to gather enough life force to complete the process. It’s his own imagination and will that shapes the body.
