orange pound cake!!! super delicious! Recipe here for those who want some! in a large bowl, use a spatula and fold 2 cups of sugar with 2 to 3 tbsp of orange zest til the sugar becomes like sand texture. Then add two sticks or 1 cup of room temp butter and fold it into the sugar until well mixed! Next add 4 tbsp of vegetable oil and switch to a whisk and mix it til nice and fluffy. After that add 4 room temp eggs 1 at a time and mix til fluffy ( I recommend doing it by hand because you don't get the texture you need by electronic whisking). At this point you want to have juiced your oranges and add 4 tbsp (5 tbsp if you really want the orange punch) and mix it in. In a seperate large bowl sift out 3 cups All purpose flower with 2 tsp baking powder and 1 tsp of salt ( a little less salt if you use salted butter in the beginning). Mix it all together really good. then your going to take your dry mix and add it to your wet mixture and fold it in with a spatula. when it starts getting to a sticky texture add 1 cup of room temp milk and gently fold it in. After the milk is folded in to a certain point where its not too wet a mixture switch too a whisk and whisk til just smooth! DO NOT OVER MIX!!!!! Pour the batter in an 9.25 x 5.25 x 2.75 IN (23.5 x 13.3 x 7 (CM)) lined loaf baking pan! Pre-Heat oven to 320°F/160°C and bake for 1hr 15 min - 1hr 30 min. For the top I use about 2-3 cups of sifted powdered sugar and 2-3 tbsp of orange juice and whisk it til smooth and creamy and top the cake when its done and taken out of the loaf pan! P.s the cake should be cracked on top, and if it doesn't jiggle and you stick a knife or toothpick in it, it's done baking! pp.s - everyone's ovens are different so keep and eye on it around the 1hr mark!
