Maybe memory is just not stored only in the brain but also in a person's soul which causes the memory to be restored every time you remove it from brain. Then when u do it many times the soul may be harmed in some way causing immense pain and insanity. This may also be the reason why MC can retain his memory despite being transmigrated into different body without his brain of original body as his memory lies in his soul as well.
